Akashi Tai’s iconic “Grand Cru” sake, the Junmai Daiginjo Genshu receives special care and attention. The most intense flavours of the Yamadanishiki rice have been drawn out to achieve a highly floral, delicate sake with a salty palate and a rich and aromatic minerality.
This Sake comes best served in a fine wine glass to reveal its intense flavours, with delicious floral notes and the famous Japanese “umami”.
This sake is one of those that reimagines “saké” for most people. Gone are the days when you warm up and shot little cups of minimal flavoured Saké. This Junmai Daiginjo is as complex, aromatic and flavour full as some of the finest wines in the world.
Nose: an explosion of aromas, including melon, lemon, bitter orange, sage and subtle herbaceous notes.
Palate:a perfect balance of lemon, bitter orange, melon and a hint of banana to offer a long-lasting finish with the saké signature touch of umami
Food Pairings: A delightful experience on its own but evolves into something magical when paired with food. Our favourite pairing would be with fried chicken or vegetable and seafood tempura. However its equally delicious with traditional sushi and omakaze meals.
